Around here Fridays mean one thing…
and every fiesta needs two things guacamole and tequila.
I don’t know about you but I could eat nothing but tacos and guacamole every day for the rest of my life and be one happy camper.
I may not be able to bike up the trails but I would be happy. So in order to keep some sort of balance in life we cut it down to once a week.

If you follow Misadventure Theory on Instagram and Snapchat you may have seen some of our Fiesta Friday creations. We are major taco fans but we do mix it up with some other dishes too. But a couple things that are Fiesta Friday staples are chunky guacamole and fresh margaritas.
We like to feel good on our adventure the next day so we keep it fresh and healthy to have plenty of energy to make it up the trail.
This chunky guacamole will change the way you make guac from here on out.
I promise you. It’s that good.
Not to mention it takes all of two seconds to throw together before you can sit down and enjoy. Less time making guac equals more time eating it! You’ll find yourself thinking, who the hell ever thought it was a good idea to smash all the ingredients into a goopy mush anyways?
Chunky is SO. MUCH. FRESHER.
We cook for two and our fridge is very small so theres not a lot of room for leftovers… not that there is ever any guac leftover no matter how much I make. So for a small batch that’s perfect for two hardcore avocado lovers you will need:
1- 2 Avocados (not too mushy not too firm)
Handful of cherry tomatoes
Quarter of a red onion
One clove of garlic
One FRESH jalapeño
Handful of chopped cilantro
Juice from one lime
Himalayan pink salt to taste
Sprinkle of chili powder
First chop the red onion, sprinkle with a little salt and a squeeze of lime on top. Smash together with your fingers or the side of your knife to release the extra flavor. Then go ahead and chop the remaining ingredients into small chunks & gently mix together with lime juice, salt and chile powder.
Easy peasy and so so fresh.
Serve with chips, we love Late July, especially the Red Hot Mojo kind. Also a side dish with salsa obviously. One of our favorites is Sadie’s Salsa.
